Howzit? 🤙
I have noticed that when buying "red beet eggs" from stores that nearly all of them have food coloring added to them. Is that normal?

No! Food coloring is not a traditional ingredient of pickled red beet eggs. The egg changing colors to a vibrant pink'ish color normally happens from the red beet coloring over the course of several days; the longer the eggs are in the liquid the darker color they will get along with color going deeper inside the egg itself.

A lot of commercial food distributors will add food dye to mimic the natural coloring process so that they do not have to wait several days before shipping the product. Some will also rely upon the artificial coloring to have a consistent color to their eggs since when made naturally the color of the eggs might vary based on the concentration of the red beet juice, vinegar, and pickling time.

Personally I prefer to make our own pickled red beet eggs at home since since most of our family prefers are more tart flavor from the vinegar while nearly all commercially prepared eggs we've tried tend to makes their on the sweet side.
